Ingredients
  

For the Gnocchi and Sausage

  • 1 lb store-bought or homemade gnocchi
  • 3 sausages Italian sausage, chicken sausage, or your favorite type, sliced
  • 1 lb Brussels sprouts trimmed and halved
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1/4 tsp crushed red pepper flakes optional, for heat

Instructions
 

Roast the Brussels Sprouts

  • Preheat your oven to 425°F (220°C).
  • Toss the halved Brussels sprouts with 1 tablespoon of olive oil, salt, and black pepper.
  • Spread them out on a baking sheet and roast for 20-25 minutes, tossing halfway through, until golden brown and crispy.

Cook the Sausage

  • While the Brussels sprouts are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes.
  • Remove the sausage from the skillet and set aside.

Cook the Gnocchi

  • In the same skillet, add the gnocchi and cook over medium heat until the gnocchi is lightly browned and crispy on the edges, about 3-5 minutes.
  • Stir occasionally to prevent sticking.

Make the Garlic Butter Sauce

  • Add the minced garlic and crushed red pepper flakes (if using) to the skillet with the gnocchi and sauté for 1 minute, until fragrant.
  • Return the cooked sausage to the skillet and toss everything together.
  • Add the roasted Brussels sprouts and stir to combine.
  • Squeeze the lemon juice over the top and toss to coat.

Serve and Garnish

  • Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the top.
  • Garnish with fresh parsley or basil and serve hot.
